Instructions
1. Make the Sourdough Dough
In a large bowl, combine the active sourdough starter, milk, sugar, and flour. Mix until a rough dough forms. Add the salt and softened butter, then knead for several minutes until the dough becomes smoother.
Cover the bowl and let the dough rest at room temperature for about 4–6 hours, or until it looks slightly puffy. The exact time depends on the strength of your starter and the temperature of your kitchen.
Transfer the dough to the refrigerator and chill it overnight. Cold dough is much easier to laminate and helps create those beautiful flaky layers.
2. Prepare the Butter
Place the cold butter between two sheets of parchment paper. Using a rolling pin, gently pound and roll it into a flat rectangle approximately 8Ă—10 inches.
Try to keep the butter evenly thick. Refrigerate it if it becomes soft.
3. Laminate the Dough
On a lightly floured surface, roll the chilled dough into a rectangle about twice the size of your butter sheet.
Place the butter in the center and fold the dough over it, completely enclosing the butter.
Roll the dough into a long rectangle. Fold it into thirds like a letter. This is your first fold.
Wrap the dough and refrigerate for about 30–45 minutes.

4. Make the Blueberry Filling
While the dough chills, add blueberries, sugar, lemon juice, and cornstarch to a small saucepan.

Remove from the heat and stir in the vanilla. Let the filling cool completely before using it. A warm filling can soften the butter layers.
5. Shape the Croissants
Roll the chilled dough into a large rectangle about ÂĽ inch thick.
Cut the dough into long triangles. Make a small slit at the wide end of each triangle.
Place a small spoonful of cooled blueberry filling near the wide end. Don’t overfill them, or the filling may escape during baking.
Roll each triangle tightly toward the pointed end, gently stretching the tip as you roll. Place the croissants on parchment-lined baking sheets with the tip tucked underneath.
6. Proof
Cover the shaped croissants loosely and let them proof at room temperature for approximately 3–5 hours.
They should look noticeably puffy and feel light and jiggly when the baking sheet is gently moved. Because this is sourdough, proofing time can vary considerably.
7. Bake
Preheat your oven to 400°F (200°C).
Whisk together the egg and milk. Brush the tops of the croissants gently with the egg wash.
Bake for about 18–24 minutes, or until deeply golden brown and beautifully puffed.
Let them cool for at least 10–15 minutes before serving.
8. Add the Glaze
For an optional finishing touch, whisk powdered sugar, milk, and vanilla together until smooth. Drizzle lightly over the cooled croissants.
Tips for Perfect Sourdough Blueberry Croissants
Keep the butter cold. If the butter starts melting into the dough, stop and refrigerate everything before continuing.
Don’t rush fermentation. Sourdough croissants need time to develop flavor and structure.
Cool the filling completely. Warm blueberry filling can cause the laminated butter to melt.
Don’t overfill. A little blueberry filling is enough. Too much can leak out and make the croissants difficult to roll.
Storage
