Ingredients

  • ¾ cup shelled pistachios, roughly chopped

Instructions

1. Cream the butter and sugar
Place the softened butter in a large mixing bowl. Beat with an electric mixer for about 2–3 minutes, until smooth and creamy. Add the powdered sugar and continue beating until the mixture is light and fluffy. Scrape down the sides of the bowl as needed.

2. Add the flavoring
Mix in the vanilla extract and almond extract, if using. The almond extract gives these cookies a subtle bakery-style flavor that pairs beautifully with the pistachios.

3. Combine the dry ingredients
In a separate bowl, whisk together the all-purpose flour, cornstarch, and salt. Cornstarch helps create that tender, delicate shortbread texture.

4. Make the dough
Gradually add the dry ingredients to the butter mixture. Mix on low speed just until the flour disappears. Be careful not to overmix, because too much mixing can make the cookies less tender.

Fold in the chopped pistachios and dried cranberries using a wooden spoon or spatula. The dough should be soft but firm enough to shape.

5. Shape the cookies
Place the dough on a sheet of parchment paper and shape it into a log about 2 inches in diameter. Wrap it tightly in plastic wrap and gently roll it to create an even shape.

6. Slice and prepare for baking
